Creamy Tomato Soup with Grilled Cheese

This classic comfort food combination is perfect for a cozy day in. The creamy tomato soup and the gooey grilled cheese complement each other beautifully, creating a satisfying and delicious meal.

Ingredients

For the soup:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

For the grilled cheese:

  • 2 slices bread
  • 1 tablespoon butter
  • 2 slices cheese (cheddar, American, or your favorite)

Instructions

Make the soup:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. 2. Stir in the crushed tomatoes, vegetable broth, heavy cream, salt, and pepper. Bring to a simmer and cook for 15-20 minutes, or until the soup has thickened.
  2. Blend the soup with a blender or immersion blender until smooth.

Make the grilled cheese:

  1. Butter one side of each bread slice.
  2. Place one slice of bread, butter side down, in a skillet over medium heat. Top with cheese and the other slice of bread, butter side up.
  3. Cook for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly.

Serve:

Serve the grilled cheese on top of a bowl of hot tomato soup.
