Ingredients
For the soup:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1 cup vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
For the grilled cheese:
- 2 slices bread
- 1 tablespoon butter
- 2 slices cheese (cheddar, American, or your favorite)
Instructions
Make the soup:
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. 2. Stir in the crushed tomatoes, vegetable broth, heavy cream, salt, and pepper. Bring to a simmer and cook for 15-20 minutes, or until the soup has thickened.
- Blend the soup with a blender or immersion blender until smooth.
Make the grilled cheese:
- Butter one side of each bread slice.
- Place one slice of bread, butter side down, in a skillet over medium heat. Top with cheese and the other slice of bread, butter side up.
- Cook for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly.
